
Gentleman's Whiskey Bacon Jam

Ingredients
- 1 and 1/2 thick sliced bacon strips, chopped finely
- 8 shallots, chopped finely
- 1 large sweet onion, chopped finely
- 2 garlic cloves, minced
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp Kosher salt
- 1/4 tsp pepper
- 1/2 C whiskey
- 1/2 C maple syrup
- 1/4 C balsamic vinegar
- 1/2 C packed brown sugar
- assorted crackers
Instructions
- 1. In a large skillet, cook bacon over medium heat until crisp. Drain on paper towel. Discard all but 2 tsp bacon drippings
- 2. Add shallots and onion and cook over medium heat until caramelized, stirring occasionally for 5-7 minutes
- 3. Stir garlic into onion mixture and cook for 30 seconds. Add the seasonings.
- 4. Remove from heat and stir in whiskey and maple syrup.
- 5. Increase heat to high and bring to a boil for 3 minutes, stirring continuously
- 6. Add crumbled bacon and reduce heat to low for 12 minutes, stirring every few minutes
- 7. Allow jam to cool slightly, then pulse half in a food processor until smooth
- 8. Stir puree into remaining jam and serve on assorted crackers
