

Bacon Mac Shack

Ingredients
- 1 pound box macaroni
- 1 pound shredded cheddar
- 1 pound mexican blend shredded cheese
- 1 pound mozzarella shredded cheese
- 1 stick of butter
- ½ cup flour
- 1 pint heavy cream
- 1 pint whle milk
- 2 tablespoons cajun seasoning
- 4 eggs
- 1 box panko
- ½ pound bacon
- 1 gallon vegetable oil
- Bacon grease
Bacon-Avocado Ranch Dressing
- ¼ cup mayo
- ¼ cup sour cream
- 1 avocado, pitted, peeled and diced
- ¼ cup chopped parsley
- 3 cloves garlic, minced
- 3 tablespoons milk
- 1 tablespoon olive oil
- ½ lime, juiced
- Salt and pepper
- 4 slices of crispy bacon
Instructions
- Boil macaroni as directed
- Cook bacon @ 400 degrees in oven, on rack in pan until crispy
- Combine bacon grease, butter in large sauce pot and cook on medium heat until melted and combined. Add flour and whisk until browned
- Add heavy cream & cajun seasoning & 1 cup cheddar, ½ cup mexican blend, ½ cup mozzarella & whisk until mixture is melted and combined. Add milk as needed to make creamy.
- Drain noodles and put in 9x13 baking dish
- Add remaining cheese & crumbled bacon
- Allow to cool in fridge at least 2 hours
- Scoop macaroni into 1” balls, place in egg wash, roll in panko and fry @ 350 degrees for 1-1 ½ minutes or until golden
- Combine dressing ingredients in food processor until consistency is creamy and transfer to airtight container.
- Serve bacon mac snack with dressing and enjoy
