Bacon Hatch Green Chili Thriller

Ingredients
- 2 cups of bacon chopped (add more if desired)
- 1 cup of onion chopped
- 2 (15oz) cans hominy
- 2 cups shredded combo cheese (monterey jack, cheddar, etc)
- 1 cup hatch green chili (add more if desired)
- 2 teaspoons smoked paprika
- Salt and pepper to taste
Directions
- Saute bacon and onion, drain grease
- In another bowl, combine remaining ingredients. Add bacon/onion mixture. Fold into 9x13 pan - top with shredded cheese and bacon bits
- Bake at 350 degrees for about an hour or until bubbly.
